Grind fresh turmeric, garlic, salt, and seasoning powder with a little water to make a paste.
Marinate the chicken pieces in the prepared paste for about 10 minutes.
Heat oil and fry the marinated chicken until half cooked.
Add garlic slices when the chicken is nearly done to make them soft and fragrant without burning.
Add bitter melon, long beans, and shallots.
Fry briefly (1-2 minutes) so that the vegetables remain crisp, then remove from heat and serve hot with rice. Optionally, add sambal belacan.
