Gather the ingredients: 1 cup of warm water, 1/4 cup of brown sugar, 1 tablespoon of yeast, 4 cups of bread flour, and a bit of salt.
Mix 1 cup of water with 1 tablespoon of yeast and 1/4 cup of brown sugar. Stir until the yeast is dissolved.
Gradually add 4 cups of bread flour to the mixture while kneading until the dough no longer sticks to your hands or the surface. The dough should be firm but not too hard.
Let the dough rise for about 30 minutes, covered with a clean cloth or plastic wrap.
Divide the dough into small pieces and shape them into pretzel shapes on an ungreased baking sheet. You can make long, twisted pretzels or smaller rolls like hot dogs.
Boil a pot of water and add 1 cup of water mixed with 1 tablespoon of baking soda to it. Dip each piece of dough in the mixture for about 30 seconds, then remove them and pat off any excess liquid.
Place the pretzels on a baking sheet and sprinkle a bit of salt over each one. You can use coarse sea salt or regular table salt.
Bake at 250°C (482°F) for about 5 minutes until they are golden brown and crispy.
Melt some butter in a small bowl and brush it over the pretzels to make them shiny and delicious. Serve hot.
