Heat oil and sauté finely chopped onions and garlic until fragrant.
Add the dried chili paste and stir-fry until the oil starts to separate. Add chicken and cook until done. (Optional: add shrimp or squid for extra flavor.)
Add fish cakes, if using; otherwise, add 2 tablespoons of oyster sauce, Chinese cabbage, tomatoes, and 1 kg yellow noodles.
Mix well to combine. Add a little water for seasoning.
Stir in Zaidah's soy sauce from the bottle under it. Beat in 2 eggs until combined thoroughly as we want a creamy texture.
Optionally, add hot oil at the end. Cook for another minute if desired.
Serve with sliced red and green chili peppers, chopped cilantro, and fried garlic for garnish.
